Quickfire Challenge – Top Chef Fans “Tweet” Instructions. With Padma and Tom together, I expected the relay challenge, and Grayson expected something crazy. It was not what I thought, but she was right.

Beverly – Crispy Pork Belly with Corn, Bell Pepper, Habanero, and Potato Hash

Pretty Boy – Bacon-Wrapped Monkfish with Potato, Leek, and Bacon Hash – Tom thinks the maple syrup in there works well.

Glasses – Corn Pure with Bacon, Potato Hash and Seared Scallop – Tom found the potatoes to be over-salted.

Edward – Potato Hash with Bacon and Soft Shell Crab Deglazed in Sriracha – He jokes that The Destroyer gave him sriracha because he assumed he was cooking Asian.

Grayson – Shrimp Puff with Crispy Bacon Hash Cake – Tom questions why it was called a puff, and she just said that it was because she thought it was fluffy.

Darth Heather – Smoked Paprika Quail with Bacon Jam and Leek Hash

Lindsay of the Corn – Crispy Soft Shell Crab, Sweet Corn and Bacon Fat Hash, Pickled Okra

Paul – Bacon Fat, Crispy Bacon, Blackberries, Chorizo and Mushroom Hash – Padma thought it was very interesting.

Sarah – Burrata Stuffed Squash Blossom with Bacon and Zucchini Hash Tom liked the crispiness.

The Destroyer – Maple-Glazed Bacon with Bacon and Kale Hash

Bottom Three – Grayson’s didn’t have enough bacon, Glasses’ was very salty and Edward’s was burnt and bitter.

Top Three – Beverly’s was subtle and flavorful, Sarah’s was nicely fried and simple, and Paul’s was unusual but it worked.

And Paul is the winner, and now has to buy drinks for everyone at the hotel bar.

Elimination Challenge – Make a Dish to Honor your Cooking Inspiration Patti LaBelle was the guest judge. Really. I can’t even describe how weird that was. I wonder when Diana Ross gets a shot. Well, that’s just odd. It seems she has a cookbook. Of course, these days who doesn’t have a cookbook.

Beverly – Korean Braised Short Rib with Edamame Scallion Puree and Hon Shimeji Mushrooms – This was for her mom. It was tender and Patti was a big fan of it. Tom thought it was prepared very well.

Pretty Boy – Sockeye Salmon with Confit Potato and Brown Sugar Carrot Puree – This was for his fisherman uncle. Patti was not happy with the fish. Tom noticed the albumin mistake that made the salmon somewhat inedible.

Glasses – Lemon-Pepper Steak with Baked Potato and Vegetables This one is for his grandma. He made the dish miniature, because this is glasses and every dish has to have whimsy. Emeril liked it, except for the use of A1 in the demigloss. Padma found it to be tender and LaBell friend Nadine was also a fan of the potatoes.

Edward – Modern Bibimbap with Lemon-Chili Sauce – This was for his grandma, who looked pretty awesome in those photos. He made a “humble Korean dish.” Patti’s friend is allergic to eggs but she liked it. What? Shouln’t she be rushed to the hospital or something? Emeril thinks he told a great story of grandma through this dish.

Grayson – Grilled Rib Eye Steak with German Potato Salad and Grilled Vegetables – Daddy’s girl dedicates it to the big guy. It is huge and she says that this is the way she learned how to make it. Tom thinks you can see the tradition in it. Patti thinks it could feed a family of 20, but Tom thinks it is basically an appetizer in Wisconsin. Patti’s friends found the meat to be stringy and gristly.

Darth Heather – Beef Stroganoff with Herb Spaetzle and Roasted Wild Mushrooms – This is for her mom, the Queen of One Pot meals, and four siblings. Unfortunagely, it became a problem for her as the beef was spongy and her choice of braising rather than pressure cooking was the wrong choice. Emeril questioned the cut of meat, Patti though it was Bigfoot. HA! Ok, she can stay. Emeril thought it was like a meal cooked at a hotel Tom drags him to. And there is a wealth of great stories there, I must say.

Lindsay of the Corn – Trout Spanakopita with Crispy Leeks and Rainbow Trout Roe She made this for her two grandmas, one Greek and the other Southern. Now, that’s an interesting combo. Patti thinks the roe tastes like caviar, something she first ate with Emeril. He loves the crispy trout, but there is too much butter. Too much butter? Who is this and what has he done with Emeril?

Paul – Quail Adobo and Ginger Rice with Green Mango Salsa – This was for his grandma. Tom likes the mango, but Patti is not a quail girl.

Sarah – Pork Sausage Stuffed Cabbage and Spinach with Browned Butter – she combined an homage to her grandfather and grandmother. Tom thought it was simple and just good cooking.

The Destroyer – Duck Fat-Fried Chicken Tender with Pickled Peaches He made this for his Japanese nanny. The story of The Destroyer already sounds sad. Patti thinks it is beautiful, and Tom said that this clearly meant a lot to The Destroyer.
