Top Chef: Just Desserts – Ep 5 – You Don't Win Friends With Salad


Quickfire Challenge – Make a soufflé. That’s all we needed to know – as the soufflé is one of, if not the most, challenging dessert to make. We have all seen the goofy sitcoms based around a soufflé where the actor dramatically removes it from the oven only to see it deflate at the last minute. Not really an exaggeration. They are that tempermental. But quite delicious when done correctly. All of them made a valiant effort, except Zac who decided to make a frozen version. Remember when he rightly criticized Zac for not making a wedding cake because it was not the spirit of the challenge? Pot. Kettle.

Danielle – Lemon and Lavender Souffle with Blueberry Ginger Compote and Honey Ice Cream – Well, her soufflé rose.

Zac – Apple Crisp Souffle Glace – He admits to not making many soufflés and his frozen version clearly doesn’t go over well.

Erika – Lemon Basil Souffle with White Chocolate Raspberry Sauce – She admits that it really needed another few seconds in the oven.

Heather H – Chocolate Raspberry Souffle, Grand Marnier and Godiva Cream – Is it me or has there been a whole lot of raspberry on the show recently? Guest Judge Sherry Yard (Wolfgang Puck’s pastry chef) says that finding the perfect soufflé is like finding a unicorn, she’s never seen one.

Yigit – Chocolate Souffle with Passion Fruit and Vanilla Bean Ice Cream

Morgan – Grand Uja Souffle with Burnt Sugar Ice Cream and Raspberry Coulis

Eric and Heather C? – Good enough for fourth and fifth places with unseen soufflés.

Bottom Three
Erika – Too sweet and heavy.
Zac – Needed air, and it was too dense.
Heather H – Nice and light, but lacking flavor.
Danielle is quite pleased with the Diva group failing here. However…

Top Three
Morgan – Great height and flavor.
Yigit – Light, nice acid, and sugary.
Danielle – She made great layers of lemon and berries.
